The Old Red Fox Cellars Spot on 36 Road Is Pouring Beer Now

October 22, 2026

The building at 691 36 Road sits on 7.5 acres just north of U.S. Highway 6. For about a decade, Palisade knew it as Red Fox Cellars. Since Saturday, Oct. 3, it has been New Terrain Brewing Co.'s Palisade taproom. The patio is pet-friendly, there's a stage, food trucks rotate daily, and a kids' area sits on the far side of the grounds next to a basketball hoop.

It's one of three places that opened outside downtown Palisade between late summer and early October. The other two are a café and a small winery. All three keep different hours, and New Terrain is the only one with its doors open seven days a week into the evening. A property best known for its events now does business every day.

Red Fox Wound Down Because No One in the Family Was Taking Over

Red Fox Cellars opened in 2014. In March 2025, WesternSlopeNow reported that the winery was winding down. It had a strong résumé. The Colorado Association for Viticulture and Enology, CAVE, named Red Fox its 2017 Colorado Winery of the Year.

Owner Scott Hamilton was clear about the reason when he spoke with KJCT:

"It's not a financial issue. We're not closing because the business is doing poorly."

The family had set Red Fox up planning to hand it to their sons after ten years. The sons went on to build their own lives instead, and Hamilton told KJCT that was a good thing. He described a slow shutdown, with the tasting room expected to stay open through about the end of June 2025 while the winery sold off its remaining wine at a discount.

Hamilton also told the station what he would miss most. "The events were always my favorite thing," he said. Whenever an event charged a gate fee, Red Fox donated all of it to charity. Keep that in mind when you look at what went in next.

What the Robbins Family Built on the Same 7.5 Acres

The Daily Sentinel reported that New Terrain, a brewery based in Golden, had bought the former winery building and its land and planned a brewery and beer garden there. New Terrain's own press archive dates that coverage to December 2025. Kaylee and Josh Robbins own the brewery. According to WesternSlopeNow's opening coverage, they expanded here because of family ties to the Western Slope, and the Palisade taproom arrived in New Terrain's 10th year in Colorado.

Here's what's on the property now:

  • A pet-friendly outdoor patio and on-site parking
  • A stage for live music
  • A food truck rotation that changes daily
  • A kids' area on the far side of the grounds, plus a basketball hoop

The taproom is built for up to 20 taps. That mix covers New Terrain's core beers, rotating releases and beers made specifically for the Western Slope. New Terrain's grand-opening notice advertised 14 beers on tap for opening day, which leaves room for the list to grow. On the Palisade tap list, Golden Hues is labeled a Western Slope hazy IPA. It's 6.6% ABV, described with ripe orange and grapefruit notes and just a touch of bitterness. The same list includes Palisade Kombucha in rotating flavors and Slüsh, a rotating lineup of adult slushies made in-house. Non-alcoholic and gluten-free beer are both on the menu too.

The new owners clearly planned around groups that don't all want the same drink. Kids, dogs, one person who drinks IPA and one who wants a slushie can all fit on the same patio.

Three New Stops Outside Downtown, Three Different Weekly Schedules

New Terrain isn't the only fall addition outside Main Street. All Things Palisade reported two others in its weekly updates. The Launch Bay opened Tuesday, Sept. 1, at 808 Shiraz Drive, in a blue building. It serves coffee and smoothies, with hot breakfast and hot lunch. St. Gerard Vineyard quietly opened at 412 35 Road on East Orchard Mesa, according to the newsletter's update for the week of Aug. 19.

Put their hours side by side and each one covers a different part of the week.

Stop Address Days open Hours
The Launch Bay 808 Shiraz Drive Tuesday to Friday 7 a.m. to 2 p.m.; hot breakfast 7 to 10 a.m., hot lunch 11 a.m. to 1 p.m.
St. Gerard Vineyard 412 35 Road Thursday to Sunday Thu 1 to 6 p.m., Fri 1 to 8 p.m., Sat noon to 8 p.m., Sun noon to 6 p.m.
New Terrain Brewing Co. 691 36 Road Every day Mon to Thu noon to 9 p.m., Fri noon to 10 p.m., Sat 11 a.m. to 10 p.m., Sun 11 a.m. to 8 p.m.

The Launch Bay closes by 2 p.m. and takes Saturday through Monday off. St. Gerard's tasting hours start in the afternoon and run only four days. New Terrain picks up where both leave off. It's open on Mondays, it's open on Tuesday nights, and it stays open until 10 p.m. on the two weekend-leaning nights. St. Gerard's hours above are the ones All Things Palisade listed in August, so check the winery's site for any seasonal change before you drive out to East Orchard Mesa on a Thursday afternoon.

The Stage and the Food Trucks Set the Weekly Rhythm

New Terrain doesn't have its own kitchen, so the daily food truck decides dinner. In the taproom's second week, the All Things Palisade calendar listed 505 Fix on Oct. 13, Dynamite Gal on Oct. 14, and Ciao Baby Pizza on Oct. 15. Oct. 16 brought 505 Fix and Panini Junction, Oct. 17 brought Ciao Baby Pizza and Rosebear's BBQ, and Phat Foodz parked on Oct. 18. Phat Foodz and Ciao Baby were also the two trucks at the grand opening. That's six different trucks in six days. If you have a favorite, check the food truck schedule on New Terrain's Palisade page before you go.

The stage has been used on weekends so far. Pick & Howl played the grand opening from 4 to 7 p.m. Still House String Band played the same slot on Saturday, Oct. 17. New Terrain posts upcoming shows on its events calendar.

Hamilton called events his favorite part of running Red Fox. The new owners put a stage on the same ground and booked live music on opening day.

A Halloween Week Worth Planning Around

The taproom's first Halloween falls on a Saturday, and Palisade's calendar is busy that week. The All Things Palisade upcoming events list has downtown Trick-or-Treat Street and Touch a Truck on Friday, Oct. 30, from 3:30 to 6:30 p.m., with a pet parade at 5 p.m. The Milky Way is running a pumpkin-decorating contest the same afternoon from 3 to 6 p.m., and it accepts pumpkins from Oct. 28 until noon on Oct. 30. On Saturday, Oct. 31, Palisade Brewing Company holds its Halloween Bash from 7 to 10 p.m. Peach Street Distillers runs its Halloween Hootenanny from 6 p.m. to midnight.

New Terrain's regular Saturday hours run from 11 a.m. to 10 p.m. That leaves time for an afternoon on the 36 Road patio before the downtown parties start that evening.

The Maves Group has watched plenty of Palisade properties change hands. The 36 Road handoff is a good example: a winery wound down on its own terms, and a family with Western Slope ties gave the same acreage a seven-day schedule.
